Watermelon and Crumbled Goat Cheese Salad

This summer salad is a delightful mix of watermelon, crumbled goat cheese, fresh mint and toasted walnuts. Garnish with some salt and a drizzle of olive oil for the perfect summer side.

INGREDIENTS:

1/2 Medium Seedless Watermelon

1 oz. Goat Cheese

1/3 cup Mint

1/3 cup Toasted Walnuts

Coarse Sea Salt and Olive Oil to taste

Step 1: Wash the rind of the watermelon and cut in half, setting one half aside. Cut the watermelon in large slices and then again in quarters. Pair the rind and slice into large triangles.

Step 2: Crumble 2 oz. of goat cheese and sprinkle over the watermelon triangles, coating evenly. Feel free to use more or less goat cheese to taste.

You can cut your watermelon any way you choose. Big triangle chunks allow the cheese crumbles to fall nicely. It is also an easy size for serving.

Step 3: Toast the walnuts in an oven or toaster oven for 2 minutes, just until the walnuts become warm, aromatic and a nice golden color. Coarsely chop the walnuts and sprinkle over the goat cheese. This heat of the walnuts will soften the goat cheese a bit which adds to the flavor.

Toast walnuts to a golden brown

Step 4: Coarsely chop the mint and sprinkle evenly over the watermelon, cheese and walnuts. The mint can also be chiffonade cut as well.

Mint is so easy to grow and is perfect for summer salads. I highly recommend planting some in your garden

Step 5: Sprinkle with coarse salt and drizzle olive oil throughout the salad and enjoy!

The perfect refreshing side for any summer meal.
